Spring break was last week so my husband and I took the opportunity to have some good friends over for dinner one evening as my schedule was much lighter. I wanted to prepare something simple but tasty as we had a pre dinner walk at the lake planned. These simple sandwiches worked well as most of the prep work could be done in advance, allowing us to eat promptly after arriving home. I also served a simple torn lettuce, grated carrot, chopped celery and pumpkin seed salad with this dressing, since I forgot to purchase extra things at the grocery store! Pumpkin muffins were to be dessert as I already had them but no one was hungry enough to want one at that point!
Here are the ingredients I used to assemble these sandwiches: grilled chicken breast – sliced, provolone cheese, avocado mashed up, sliced tomato, mayo, mustard, and caramelized onions. Sliced onions would have been quicker but I love these onions! A healthier nitrate/nitrite free bacon would have been a nice addition, but then it is no longer a quick, easy dinner! I rarely use wheat products anymore as I don’t digest them well, and usually end up with a stuffy nose the next day, but I made an exception and purchased a small loaf of sourdough bread from Panera. Having them preslice it was quick and efficient as well!
When we arrived home all we had to do was lightly toast the bread and put everything on the table. We had plenty of time to visit and it took my husband and I only a little time at the end of the evening to clean up everything.
You know, most of us have great ideas about wanting to show more hospitality and spend time with those who uplift and encourage us. Yet we allow ourselves to be so busy it seems too much of a burden to prepare. Having a simple plan, such as these sandwiches, reduces that burden and makes it easier to entertain. - Sliced, toasted sourdough bread or other bread option such as spelt
- Sliced, grilled chicken breast
- Onion – sliced or chopped and caramelized
- Avocado – mashed
- Provolone cheese
- Sliced tomato
- Place all ingredients on the table and allow guests to build their own sandwiches!
