When I first started this blog over a year ago, one of the first posts was about eating fat. You can read it here. I included a quick snack/dessert type idea that is one of my favorite ways to include coconut oil in my diet. Recently a friend mentioned that it was difficult to find that post so we thought it a good idea to give it it’s own!
There are so many reasons to add coconut oil to your daily routine, not only in recipes, but also for skin care. (Health Impact News has had several articles about coconut oil lately – this one being the most recent.) It’s very beneficial to the skin and it makes a great eye makeup remover! Just allow a small amount to melt in the palm of your hand. Gently rub onto eye lashes and lid. Normally I go ahead and brush my teeth to allow the oil to start working on dissolving the mascara and eye shadow. I then take part of a cotton ball, add a bit of water, squeeze it out, and wipe off the makeup. Sometime I use a tiny bit of avocado oil to remove any remaining mascara. After I finish cleaning my face I then use a small amount of the coconut oil, a few drops of avocado oil and a drop of whichever essential oil I want to add. At the moment it is cedarwood, which is also beneficial to skin.
Okay, now for the recipe, which is really just a matter of adding ingredients to taste! I usually use the same amount of coconut oil and nut butter – for me it’s almond or peanut butter, but use what you like. Then add cocoa and coconut shreds and honey to taste. My daughter likes to add oats to hers. Chia seeds are nice to add as well. Mix and eat right away. Even better however, is putting it in the refrigerator to firm up. Delicious!
If you’d like other delicious ways to get coconut oil into your diet then look at the recipes on the Tropical Tradition website. I’ve tried some and have especially enjoyed the freezer fudge. The reason I use my particular recipe so much is because it’s so simple and uses just a small amount of sweetener. To make it so simple to pack in my lunch I use a four ounce mason jar and then add a plastic lid.

- 1 T coconut oil
- 1 T nut butter such as almond or peanut
- 1 t cocoa
- 1 t coconut shreds (optional)
- 1 t chia seeds (optional)
- oats (optional)
- Honey to taste
- Mix ingredients and eat!
- Or refrigerate and eat after it has set up.
