Who doesn’t like chocolate and mint together? Well, maybe someone out there, but I can’t imagine who it would be! The recipe I want to share today is simple, quick, delicious and chocolate. Can’t beat that combination!
A friend of mine shared this recipe and I’ve made it several times. It can be made very simply in muffin tins, ice cube trays or whatever you have handy. It can also be made using some of those cute candy molds or even a mini muffin tin. Another friend of mine made them using a non stick tray with disc shaped molds. They can be as pretty or as rough as you prefer. The taste doesn’t change however, regardless of shape or cuteness! They can be served as a delicious little something to take the edge off appetites while waiting for Christmas dinner, as dessert, or any occasion when chocolate is required!
With only four ingredients and a blender these can be whipped up in minutes. And to make yourself feel totally at peace with eating them, think about the fact that they are filled with coconut oil. Many health benefits there. Honey is another ingredient and if using raw local honey, more benefits are realized. Young Living peppermint essential oil is the third ingredient. Besides tasting great there are therapeutic benefits. And cocoa seems to have health benefits as well, including heart, mood and also contains antioxidants! (However, if you are sensitive to caffeine or have kidney stone issues, you might want to abstain.)
So for those of you who want to join me for some healthy treats here’s the recipe!
- 1 cup coconut oil
- 1/2 cup cocoa
- 1/4 cup honey
- 5-6 drops Young Living peppermint essential oil
- Place all ingredients in blender.
- Mix until creamy.
- Place in molds of choice
- Freeze until ready to serve.
- Be aware of the fact that these will not do well kept out of the refrigerator/freezer for long periods!
